Forgotten cookies are another family recipe we’ve been making for years. For some reason we usually make them around Christmas time. Probably because we have the oven hot from making batches of holiday treats and these are the last ones to go in at the end of the day. They really are the kind you make and then just forget about, which is why I love them. So easy!
These meringue cookies have a satisfying crunch and the skor bits are a sweet surprise!

Meringue cookies so easy you can forget about them

Ingredients
- 2 Egg Whites
- 3/4 cup White Sugar
- 1 cup Rice Krispies
- ½ cup Skor Bits or Mini Chocolate Chips
Instructions
- Pre-heat oven to 375°
- Beat egg whites until stiff, then add sugar and beat until peaks form
- Gently fold in the rice krispies and skor bits
- Line a cookie sheet with parchment paper, drop a spoonful of mixture on the sheet and continue about 2 inches apart for each drop
- Put the cookie sheet in the oven and turn it off, leave the pan in overnight
Notes
These can be stored in an airtight container for a few days.
