The Other Kid (OK) loves Hamburgers. She just wants them with cheese and they need to have lots of flavor on their own. This is my Knier Burger recipe, one I have put together especially for OK. If you’re a meat with a little salt and pepper burger purest, this isn’t for you. The added ingredients not only lend flavor, but keep the burgers moist when grilled.
Knier Burgers have quickly become a staple around here. As soon as the weather gets nice enough to BBQ, these get added to the rotation on nights OK is here for dinner. They are great on their own, or topped with cheese and bacon and whatever condiments you love on your burger.
We’re heading into the Memorial Day weekend here, and these burgers are perfect for grilling out. In the winter, when we’re craving them but don’t want to brave the snow to pull out the BBQ, we do them in a cast iron pan. They get this great crust on them in the cast iron, but I still prefer grill marks on my burger!
Burger Pointers
The secret to getting some great moisture and flavor in these burgers is to grate onion/shallot into them. I like shallots better, but onions are fine too. Using a box grater over the bowl, you end up with a juicy onion paste that integrates well and doesn’t leave large chunks. I use a rasp for garlic but mincing with a knife or garlic press works well too.
When forming the burgers, put a small dimple in the top. This keeps the burgers from shrinking when you cook them. On warm days, I pop them back in the fridge for 10 minutes after forming them so they firm up a little before putting them on the grill.
Knier Burgers
Ingredients
- 1.5 lbs Ground Beef 80/20 mix
- 1 Egg
- 1 clove Garlic crushed
- ½ Shallot
- 2 Tbsp Worcestershire Sauce
- ⅓ cup Panko Bread Crumbs
- Salt & Pepper to taste
Instructions
- Using a box grater, grate your onion over a larger mixing bowl
- Add the rest of the ingredients to the bowl and mix with hands until combined, the burgers should be wet, but if they feel too moist add a little more panko.
- Place wax paper or parchment paper on a cookie sheet and form the burgers (see note below)
- Cook on the BBQ or in a cast iron pan to your desired temperature
- Top with your favorite burger condiments and enjoy!
