What do you do with leftover, cooked hamburgers? You make Bacon Cheeseburger Tacos of course! We posted our Knier Burgers recipe previously, and often have a couple of leftover burgers. We cook one or two extra because you just never know who is going to want another one.
Leftover hamburgers aren’t great in the microwave the next day, and throwing them on the grill can dry them out. If you’re looking for a quick and easy leftover dinner or lunch and have burgers, this is a fun way to use them up. I mean, truthfully, you can put anything in a tortilla and make a taco!
It feels weird to write an actual recipe for Bacon Cheeseburger Tacos using just leftover burgers. Although after doing a quick Google search, I’m definitely not the only one! A lot of the time it’s just Steve and I, and we have leftovers almost all the time. Finding ways to use them up without getting sick of them can be a challenge.
Microwaving tortillas is fine, but a couple of seconds in a fry pan or grill top will elevate your tortillas, warming, and softening either flour or corn. You can top your Bacon Cheeseburger Tacos with anything you like, but I think they are great just with some chopped dill pickle. It reminds me of my favorite local pizza, the Bacon Cheeseburger thin crust from Tomaso’s. I’ll post about that later though!
Bacon Cheeseburger Tacos
Ingredients
- 2 Cooked burgers diced
- 2 pieces Bacon cooked and crumbled
- ½ Onion diced
- 1 Dill Pickle diced
- 5 10" Flour Tortillas
- Shredded Cheese
- Olive Oil
Instructions
- Add oil to a large frying pan and turn on heat to medium
- Once the oil is hot, add diced onions and sauté for 2-3 minutes, until translucent
- Add the bacon and chopped hamburger and cook until just warmed through
- While the filling warms, heat tortillas in the microwave between paper towels
- Place filling on tortilla and top with cheese and chopped pickle
