One of the first meals Steve and I made together when we started dating was a Smokey Bean and Salsa Tostada. He came to visit me in Toronto and we roasted the vegetables, made the beans, onions, and a pitcher of margaritas. It was a good night! This recipe has a few complicated pieces, but once you put it all together it’s totally worth it.
When we started dating, Steve was trying to eat a vegetable-focused diet. Although I love vegetables, they weren’t usually the primary focus of my menu planning. I do love Mexican though. So when we came across this recipe, it seemed like a no brainer.
Not Recommended For a First Date
Our Smokey Bean and Salsa Tostada ends up looking beautiful once it’s all put together, but it can be a bit messy to eat. Although it was a fun thing to work on together, I definitely wouldn’t recommend it for a first date type meal. They are a bit awkward and the tostada can get crumbly. If that doesn’t bother you though, have at it!
TOPPINGS
The first thing you need is a real base, something that holds the ingredients on. That’s where our Easy Chipotle Refried Beans come in. They are like the glue. Put a base of that down on the Tostada and then top any way you like. We recommend Roasted Salsa followed by slices of avocado, Chipotle Pickled Onions, cojita cheese, and cilantro. Serve with a lime on the side for squeezing over the top.
We usually make these meat free. However, we have topped them with pulled chicken, taco meat, or carne asada in the past. Any of your favorite Mexican condiments or toppings work here. Experiment! Our recipe doesn’t really have quantities, because you can add as much or little as you like. We jut hope it inspires you!
