This Week’s Dinner
This week we used one of our favorite recipes from last week, the Roasted Cherry Tomatoes to add an additional pop to our Grilled Italian Chicken Dinner. You can easily modify that recipe to add some garlic and Italian seasoning and top with fresh basil to compliment the rest of this dish. Here are the three recipes you need to make our plate this week.
Plating
To make our Grilled Italian Chicken Dinner place one (or two) of your chicken thighs as the base of the plate. Take the roasted cherry tomatoes and spoon over the chicken and then top with asparagus. Add some extra parmesan and finish with extra balsamic vinegar if needed.
Drinks & Dessert
This week we made a Strawberry Rhubarb Compote and then used the base of that to create this pretty spring Strawberry Rhubarb Gin Fizz.
In the midwest spring comes slowly and with it fresh fruits and vegetables. Depending on where you live, you may be way past asparagus and rhubarb. We hope though, that you’ll get inspiration from these recipes and figure out how to use fresh and local in your cooking.
