For years as a special treat my mom has made cookie waffles. It’s like a giant sugar cookie you bake in the waffle iron. They are amazing and can be topped with just about any fun dessert thing you can think of! Ice cream, whip cream, fresh fruit, chocolate sauce…. the possibilities are endless.
Mom’s Cookie Waffles

Equipment
- Waffle Maker
Ingredients
- 1 cup Butter or Margarine
- 1 cup Sugar
- 1 tbsp Vanilla
- 1/2 tsp Salt
- 2 Eggs
- 2¼ cups Flour
- 1/2 tsp Pumpkin Pie Seasoning (optional)
Instructions
- Preheat the waffle maker
- Cream together butter and sugar in a large mixing bowl on medium speed. Add the vanilla, salt and pumpkin pie seasoning (if using).
- Increase the speed and add the eggs in, blending until smooth.
- Decrease the speed and add the flour, mixing well.
- Drop about ⅓ cup of batter on each grid of the waffle maker. Close and bake until golden (about 2½ minutes).
- Remove from waffle maker and place on a wire rack to cool.
