Our Strawberry Rhubarb Gin Fizz is the perfect patio drink for those spring days that are just teasing you with warmer weather. Rhubarb is one of those early spring treats that you see everywhere pair with strawberries. For this recipe, we’re taking the Strawberry Rhubarb compote we made earlier, turning it into a cocktail syrup and making a fancy and refreshing spring drink.
Strawberry Rhubarb Syrup
Using the Strawberry Rhubarb Compote we made earlier this week, we’ll make the fruit syrup needed to make the fizz. You’ll need cheesecloth or a fine mesh sieve, a few tablespoons of the compote, a spoon and a container to catch the syrup. We used cheesecloth, shown below, over a glass and secured with a rubber band. Put a few tablespoons of the compote and using the back of a spoon press into the cheesecloth gently. The syrupy liquid will pass through, leaving the pulpy fruit chunks. Remove the pulp and add more compote until you have about 1/2 to 3/4 Tbsp of syrup for each drink you are making.
Pro tip – don’t throw out the fruit that doesn’t pass through the cloth. It’s perfect with yogurt, on toast or mix it back into the compote you have leftover.
Simple Syrup
Simple Syrup for cocktails is just equal parts sugar and water simmered until the sugar dissolves and cooled. Here’s a recipe if you need it, or you can usually find it pre-made in most liquor stores.
Gin Fizz
I have an old bartending book that has a Gin Fizz recipe in it, so my guess is this basic drink has been around for years. Gin, lemon juice and soda water. Simple. We’re adding our fresh Strawberry Rhubarb Simple Syrup and making a spring Strawberry Rhubarb Gin Fizz you’ll love. It’s not too sweet, but add more simple syrup if that’s your thing.
Gin
Don’t use fancy gin here. We have some we love (like Dillons Gin 22) and will drink straight over ice or just with soda. You are adding sugar and fruit to this so it really doesn’t have to be the good stuff, unless you want it to be. We found a decent (read not terrible super cheap) gin on sale and it’s great cocktail gin. Your definition of this might be different than ours. Use what you have, what feels good. And if you don’t like Gin (which we totally get) use vodka!

Ingredients
Strawberry Rhubarb Syrup
- 3 Tbsp Strawberry Rhubarb Compote (approx – click for recipe)
Strawberry Rhubarb Simple Syrup
- 1 Tbsp Strawberry Rhubarb Syrup
- ¼ oz Simple Syrup click for recipe
Strawberry Rhubarb Gin Fizz
- 1 oz Strawberry Rhubarb Simple Syrup
- ½ oz Lemon Juice
- 2 oz Gin
- Ice
- Soda Water
Instructions
Strawberry Rhubarb Syrup
- Place cheesecloth or a fine mesh sieve over a dish or glass and add the Strawberry Rhubarb Compote
- Using the back of a spoon gently press to collect the Strawberry Rhubarb "juice"
Strawberry Rhubarb Simple Syrup
- For every 1 oz of Strawberry Rhubarb Syrup combine with ½ oz of Simple Syrup
Strawberry Rhubarb Gin Fizz
- Fill a cocktail glass half way with ice
- In a shaker glass add 1 oz of Strawberry Rhubarb Syrup, ½ oz of lemon juice, 2 oz of Gin and ice, shake until well combined
- Pour the Strawberry Rhubarb gin mixture over the ice
- Top with soda
- (Optional) Garnish with a strawberry and lemon wheel
