Strawberry Rhubarb Gin Fizz
A classic Gin Fizz with a spring twist. Add strawberry rhubarb simple syrup to make this lovely, fresh, bright spring cocktail

Ingredients
Strawberry Rhubarb Syrup
- 3 Tbsp Strawberry Rhubarb Compote (approx - click for recipe)
Strawberry Rhubarb Simple Syrup
- 1 Tbsp Strawberry Rhubarb Syrup
- ¼ oz Simple Syrup click for recipe
Strawberry Rhubarb Gin Fizz
- 1 oz Strawberry Rhubarb Simple Syrup
- ½ oz Lemon Juice
- 2 oz Gin
- Ice
- Soda Water
Instructions
Strawberry Rhubarb Syrup
- Place cheesecloth or a fine mesh sieve over a dish or glass and add the Strawberry Rhubarb Compote
- Using the back of a spoon gently press to collect the Strawberry Rhubarb "juice"
Strawberry Rhubarb Simple Syrup
- For every 1 oz of Strawberry Rhubarb Syrup combine with ½ oz of Simple Syrup
Strawberry Rhubarb Gin Fizz
- Fill a cocktail glass half way with ice
- In a shaker glass add 1 oz of Strawberry Rhubarb Syrup, ½ oz of lemon juice, 2 oz of Gin and ice, shake until well combined
- Pour the Strawberry Rhubarb gin mixture over the ice
- Top with soda
- (Optional) Garnish with a strawberry and lemon wheel
Notes
Use lime juice, instead of lemon juice if you don't have it. Add more simple syrup if you like it sweeter, and if you aren't a fan of Gin, this tastes great with Vodka too!
