Summer produce isn’t just for salads and snacking. Sometimes, it can be used to make a refreshing and fun adult beverage. Look at us getting getting our veggies in with a shot of Gin! This Cucumber Gin Gimlet tastes like your summer garden in a glass. Since cucumbers are mostly water, getting the flavor out of them is easier than you would think!
We’ve written before about how Gin is a relatively new alcohol in our “like” category. It all started with Dillon’s Unfiltered Gin 22, and we’ve expanded from there. We’ve written about our love and experience with Dillon’s and their products here if you want to know more. All I will repeat is, if you’re in the Niagara Ontario region and haven’t yet, stop by. Cucumber “Juice”
You can add the cucumber flavor to your gimlet in two ways. The first is to dice it, drop it in the bottom of a glass, and muddle. This works, but if you’re planning on making a few for a crowd (or just yourself, we don’t judge) then we suggest using a food processor. Once again our little Kitchenaid chopper is perfect for the task. Peel and roughly chop the cucumber then add it to the bowl of the processor. We also added a little pinch of salt. It helps bring out the juice and adds an extra dimension to the herby goodness of the Gin and lime later on. Pulse until it’s fully broken down and mostly liquid. Then press it through a fine mesh sieve to collect all the cucumber water goodness.
Our Cucumber Gin Gimlet is pretty easy from this point forward. Just Gin, lime juice, cucumber “juice”, and a little agave if you need. You can always add some mint, although to us that feels a little too spa like! However you drink it, enjoy!

Cucumber Gin Gimlet
Ingredients
Cucumber Juice
- 1 Cucumber, peeled and roughly chopped
- pinch Salt
Cucumber Gin Gimlet
- 2 oz Gin
- 1 oz Cucumber Juice
- Juice from 1/2 a Lime
- Agave Nectar or Simple Syrup (optional)
Instructions
Cucumber Juice
- Add the roughly chopped cucumber and a pinch of salt to the bowl of a food processor and pulse until the cucumber is fully broken down and soup like
- Pour the contents of the food processor into a fine mesh sieve set over a bowl or container
- Using a spatula or the back of a spoon gently press the cucumber mash into the sieve to release all the juice, leaving only a little pulp behind
- Cucumber juice can be stored in an air tight container in the fridge for up to 3 days
Cucumber Gin Gimlet
- Add ice to a martini glass to chill
- Fill a cocktail shaker half way with ice, then add the Gin, juice from half a lime, cucumber juice and agave nectar if using
- Top the cocktail shaker and shake gently for 15 seconds
- Dump the ice from the martini glass and strain the contents of the shaker into the glass
- Garnish with a slice of cucumber
