Cucumber Gin Gimlet
Cucumbers fresh from the garden "juiced" and added to Gin and lime juice. This bright green cocktail tastes like your summer garden in a glass.

Cucumber Juice

peeled and roughly chopped

Salt
Cucumber Gin Gimlet

Juice from 1/2 a Lime
Agave Nectar or Simple Syrup
(optional)
Instructions
Cucumber Juice
Add the roughly chopped cucumber and a pinch of salt to the bowl of a food processor and pulse until the cucumber is fully broken down and soup like
Pour the contents of the food processor into a fine mesh sieve set over a bowl or container
Using a spatula or the back of a spoon gently press the cucumber mash into the sieve to release all the juice, leaving only a little pulp behind
Cucumber juice can be stored in an air tight container in the fridge for up to 3 days
Cucumber Gin Gimlet
Add ice to a martini glass to chill
Fill a cocktail shaker half way with ice, then add the Gin, juice from half a lime, cucumber juice and agave nectar if using
Top the cocktail shaker and shake gently for 15 seconds
Dump the ice from the martini glass and strain the contents of the shaker into the glass
Garnish with a slice of cucumber
