Our Italian Marinated Chicken is perfect for the grill, but don’t worry you can bake it in the oven too! We prefer chicken thighs to chicken breasts almost all the time. They are cheaper, juicer and way more forgiving when cooked. They also lend well to some great bold flavor.
The spring recipes we are working on have a lot of lemon in them. It brightens up the dishes and the zest ensures you taste it even after it’s grilled. If you don’t have a lemon around, just add a little extra vinegar and move on. It’s not going to make it taste any less amazing, and next time try it with the lemon and see which way you like better!
When you put the chicken in the bag and pour the marinade over, you want to make sure that you seal the bag, removing the air, and smush the marinade around. I often set the bag in a bowl or on a plate, just in case it leaks and place it in the fridge. A couple of times a day, if I’m home, I’ll flip the bag over and smush it some more. This ensures the chicken is well coated and all of the pieces get a good dose of that goodness.
Italian Seasoning
This Italian Marinated Chicken could easily be done by adding a little extra vinegar to your regular Italian salad dressing, but it won’t be as good! If you’re looking for a great Italian herb mix, we get ours at Penzeys’ – and like I have said before, you can’t go wrong with Penzeys’ seasonings!
Italian Marinated Chicken
Ingredients
- 6 Boneless Skinless Chicken Thighs
Marinade
- 5 Tbsp Olive Oil
- 3 Tbsp Red Wine Vinegar
- 1 Lemon juice & zest
- 1 Tbsp Italian Seasoning
- 2 cloves Garlic roughly chopped
- ½ tsp Salt
- ¼ tsp Freshly cracked pepper
Instructions
- Whisk all of the marinade ingredients together in a bowl
- Place the chicken thighs in a large Ziploc bag and pour the marinade over them, seal the bag and carefully squish the chicken around to ensure it is completely covered and then place in fridge to marinate for 6 -12 hours°
- Heat the grill to 350°F – 375°F and grill chicken for approximately 20 minutes or until you reach an internal temperature of 165°F°
