Slice the red onion thinly and place in a non-reactive bowl
Add the vinegar, salt and sugar and then a few dashes of the chipotle hot sauce
Stir gently and then let sit at room temperature for one hour
Store in an airtight container in the fridge for up to one week

*The chipotle hot sauce will give a smokey heat to these onions. We add about a 1/4 tsp but you can add more or less depending on how much heat you like.These onions are great on nachos, tacos, fajitas, eggs, etc. Anything that you need a little acid on.
