In a saucepan over medium heat add the sugar and water and cook until dissolved and then remove from heat (you'll know the sugar is completely dissolved when the liquid goes from cloudy to clear)
Place the sage leaves in a 16oz mason jar and pour the simple syrup overtop
Steep the sage leaves for 15 to 45 minutes, tasting every 15 minutes until the flavor is to your liking, then remove the sage leaves and allow to cool to room temperature
Place the lid on the mason jar and finger tighten, place in the fridge

Steep the sage leaves in the warm syrup ensuring you taste every 15 min or so. You can gently stir the leaves when you taste to distribute the oils and ensure a good flavor.
